These cakes were inspired by the song "Twink." They're basically Twinkies shaped like cupcakes.
Floor: Twink(ie) Cakes
- 2 cups all-purpose flour
- 3 teaspoons baking powder
- 1/4 teaspoon salt
- 10 Tablespoons unsalted butter, room temperature
- 1 cup sugar
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/8 teaspoon almond extract
- 1 cup milk
For the Filling:
- 2 teaspoons very hot water
- 1/4 teaspoon salt
- 2 cups Marshmallow Fluff
- 1/2 cup vegetable shortening
- 1/3 cup powdered sugar
- 1/2 teaspoon vanilla
For the Frosting:
- 2 1/2 sticks butter
- 2 1/2 cups powdered sugar
- 1/8 teaspoon salt
- 2 teaspoons vanilla extract
- 2 Tablespoons heavy cream
- Preheat oven to 350 degrees F. Line a cupcake tin with baking cups, and set aside.
- In a medium-sized bowl, whisk together flour, baking powder and salt. Set aside.
- In the bowl of an electric mixer, beat together butter and sugar at medium-high speed until pale and fluffy, about 3 minutes.
- Beat in eggs one at a time, beating well after each addition.
- Beat in vanilla and almond extract.
- Reduce speed to low and add flour mixture alternatting with the milk in 3 batches, beginning and ending with the flour mixture. Beat until just incorporated.
- Fill baking cups about 2/3 full.
- Bake for 15-20 minutes, or until a toothpick inserted in the center of one cake, comes out clean.
- Remove from the oven and let cool in the pan for 10 minutes before removing to a wire rack to cool completely.
- To make the filling: Combine the hot water and salt in a small bowl and stir until salt is dissolved. Let this mixture cool.
- Combine the Marshmallow Fluff, shortening, powdered sugar, and vanilla in a medium bowl
- Mix well with an electric mixer on high speed until fluffy.
- Add the salt solution to the filling mixture and beat well.
- Using The Cone Method, fill each cupcake with marshmallow mixture.
- To make the frosting: In the bowl of an electric mixer, whisk butter until smooth.
- Add sugar and salt, and continue to whisk for about another minute.
- Add vanilla and heavy cream, whisk until well combined.
- Increase mixer speed and beat until light and fluffy, about 2 minutes
- Frost completely cooled cakes.

Love the chart! Way to go Montoya, he's killing it. "Sludge Pop" makes me think of Fudgesickles.....
